Zhang Ping Shui Xian is unique for being the only Oolong that has the compression as one of the standard processing steps. This rare tea has a long history of almost one century, however, charcoal-toasted Zhang Ping Shui Xian is an innovation in the recent years. Actually, the traditional Zhang Ping Shui Xian is toasted as well, but at lower temperatures, starting from 80°C, lower to 70°C after 2 hours, then 60°C after another 2 hours, and in the end the tea nuggets are toasted at 55°C to the optimal dryness, the entire toasting process lasts more than 10 hours. For charcoal-toasted Zhang Ping Shui Xian, the toasting temperature is over 100°C, and combined with the technical adjustment in other processing steps, it brings a new style, both in flavors and aromas, very different to the traditional one.
Unlike the traditional products, which are renowned for the floral fragrances, the charcoal-toasted Zhang Ping Shui Xian focus on fruity and honey notes, furthermore, instead of fluttering high like the traditional ones, its aromas are more contained in the liquor. Due to the different process, the flavor of this tea is more powerful and complex, reminding us somehow of Dancong Oolong.
